Is this a good amount of AP classes to have throughout my HS career?

First of all take a deep breath, and relax. That looks like every possible AP class to take imaginable. A few of the UC schools look at two GPA's the full 4 year one, and then just sophomore/junior year combined one. You should take to a school counselor to get the specifics about this. I think the general rule is UC will take the top 10% of the graduating class. Of course other aspects are looked at too including clubs and organizations. Also SAT/ACT tests. You sound like a great student, and I am sure you will ultimately end up where you want to be/are meant to be.
